Pumpkin Waffles

1½ cups all-purpose flour
½ cup cornmeal
2 tsp baking powder
¼ tsp cinnamon
¼ tsp ginger
¼ tsp nutmeg
½ tsp salt
3 eggs, beaten
1¾ cups milk
½ cup vegetable oil
¾ cup cooked and pureed pumpkin
½ chopped pecans

 

Heat waffle iron. In a large mixing bowl, sift together dry ingredients. In a medium bowl, combine eggs, milk, oil and pumpkin puree. Whisk until smooth. Add wet ingredients to the large mixing bowl and stir to combine, a few lumps are okay. Stir in nuts. Add ⅓-½ cup of waffle batter to your heated waffle iron. Cook according to your waffle maker instructions until crisp and golden. Adjust amount of batter used, if necessary. Serve immediately or keep warm in an oven set to 200°F until all waffles are cooked. Serve with butter and maple syrup, topping with additional nuts if desired.
