The Big Sloppy
There’s so much to say about the comforting nature of a Sloppy Joe! In my house we like to make a double batch of this and freeze half for easy dinners in the future. The recipe is easy enough (and customizable!) to always yield tasty results but keep things quick and easy. And, with kiddos in the house there’s never enough time to go around. This recipe helps us spend more time conversing around the dinner table and less time hovering over the stove. Now that is comforting.
Homemade sloppy Joes
Ingredients:
1lb ground beef (you could sub out the beef for beyond beef or tempeh.
1/2 poblano pepper, small dice
1/2 yellow onion, small dice
4-5 garlic cloves, minced
1/2 Jalapeño pepper, minced
2 TBSP Tomato Paste
2 tsp Chili Powder
2 tsp Hungarian Paprika
1-2 TBSP Worcester Sauce
1/4 cup Ketchup
Brown Sugar to taste
Salt & pepper to taste
Soft and squishy hamburger buns.
Make it:
Sauté onions, peppers and garlic in that order in wide, shallow sauce pan. Careful not to burn that garlic!
Add beef, salt, and pepper and brown meat
Add Tomato paste and brown sugar, mix
Add Spices and Worcester sauce
Mix ingredients well, taste and adjust to your preference
Assembly:
Spoon it up on your bun of choice. The more the merrier!
We love to melt some Bongards American Cheese on these.
Occasionally if time allows we'll take the other 1/2 of the yellow onion, cut it up into little matchstick-size pieces and fry till crispy. Makes for some great, crunchy topping.
