Apple Cider Shrub Cocktail

2 cups cranberries
¼ cup apple juice
2 Tbsp honey
10 sprigs fresh thyme
¾ cup sugar
1 cup apple cider vinegar
2 oz whiskey
1 oz unsweetened cranberry juice
½ oz fresh orange juice
1 oz sparkling apple cider

Add cranberries, apple juice, honey, thyme and sugar to a small pot. Cook, stirring frequently, until the sugar dissolves and the cranberries start to pop. Allow to cool to room temperature. Combine cranberry mixture and vinegar in a glass jar or bowl. Refrigerate for up to 2 days. Stir very well, strain through a fine mesh strainer and discard the solids. Reserve 1 oz of shrub for recipe, and store the remainder, refrigerated in a glass jar for up to 10 days.

Fill a cocktail glass with ice. Add the whiskey, cranberry juice, orange juice and reserved shrub. Stir to combine. Top with sparkling cider. Garnish with a sprig of thyme.
