John Garland’s Caesar Salad tastes great as is, but if you want to lean into it as main course, simply top it with a protein - I like fish. In the course of writing The Cookbook Test on Substack, I stumbled upon a weird and excellent book called An Uncatered Affair, which turned out to have one of the simplest and tastiest fish recipes I’ve happened upon in recent years. It’s flavorful, it’s compelling, it’s easy-to-execute, and it’s great with a starch like rice or couscous, or sliced and served atop a Caesar.
GRILLED SALMON WITH CITRUS AND HERBS
2 tsp grated lemon zest
2 Tbsp grate lime zest
1 1/2 Tbsp minced garlic
1 1/2 tsp coarse salt
1/2 tsp freshly ground black pepper
1 Tbsp olive oil
1 Tbsp chopped fresh thyme or 1/2 tsp dried thyme
1 1/4 - 1 1/2 pound salmon filet
Combine all the non-salmon ingredients in a small bowl and mix well.
Put your salmon filet on a cooking sprayed piece of tinfoil on a sheet pan. Rub the mixture onto the fish evenly. Broil for 6-12 minutes, checking and rotating halfway. Salmon should appear opaque in the center when done.
