Turkey Tater Hash

INGREDIENTS 
2 Tbsp oil or fat 
1 lb ground turkey 
1 tsp onion powder 
1 Tbsp fresh or 1 tsp dried sage 
3 lbs potatoes, cubed 
1 red bell pepper, diced 
1 yellow onion, chopped 
2½ cups stock 
4 cloves garlic, minced 
2 tsp oregano 
10 oz tomato sauce 
2 tsp paprika 
1 Tbsp dried chili power 
Salt & pepper 

DIRECTIONS 
1. In a large skillet, heat 1 Tbsp oil or fat and add in turkey. Add in salt, pepper, onion powder and sage. Remove meat from skillet and set aside once browned. 

2. Add 1 Tbsp oil to pan and saute onions and peppers for  5 minutes, or until translucent. 

3. Add potatoes to skillet. Brown all sides but be careful not to smash or crush. 

4. Pour stock into to skillet. Bring to a boil and simmer until all moisture cooks off. If stock boils off too quick, add in ½ cup water. 

5. Reduce heat and add turkey back. Add in garlic, oregano, tomato sauce, paprika and chili powder. Mix evenly and cook until potatoes are softened. 

6. Serve up a bowl and add toppings of your choice!
